Cheese pizza varieties
Arguably the best and tastiest part of a pizza is the cheese. Pizza cheese is a cheese that is pasteurized in a process that leaves it in a form that melts well and stays chewy, when added to a pizza top. Contrary to popular belief, true pizza cheese is not mozzarella, but is its own type of cheese. It is made with machinery that leaves it perfect for the purposes of pizza, but without a lot of the equipment that is needed to make actual mozzarella cheese.
Pizza cheese’s texture is soft and melts well. After it melts, it has a stringy quality that you have no doubt noticed when you eat a good cheese pizza. When you pull a piece of pizza apart from the pie, or bite into a piece , the cheese will often become “stringy” and hard to pull fully away. This is the cheese that people love most on pizza, and it is well worth the little bit of work you have to do, to pull it apart.
